use those summer zucchini: zucchini brownie recipe

Even though my next self portrait series photo is due, I couldn’t bear to do two posts in a row with me in them, so I thought I would share my very favorite recipe for summer. Let me first say that in a world chocked full of amazing food blogs, I don’t kid myself to…

Peeeeeeerfect timing Betsy! Since I named all three of my kids Z names, I got stuck with making Z foods for this years school potluck HAHA! Plain old Zucchini would just make my kids cringe. This will go GREAT with the Ziti I’m making Monday night! Sounds yummy (and sneaking in veggies, I’m all over that) My kids are self proclaimed fruititarians!

WOW! I have to build up confidence to my baking for this one ha! I’m a total wuss on doing something like this… I’m stumped on squeezing the juice out. lol

Are these missing eggs? Like it is right now, they will not turn out.

cloudy morning on the beach with the kiddos

John spent some time taking photos of me and the kids one morning while at the beach in Myrtle Beach. (BTW, it’s North Myrtle Beach, which I hear is a LOT different than just regular Myrtle Beach.) Oh and I’m aware that I’m watermarking photos I didn’t take, but I’m just going for consistency here….

I LOVE all the Betsyness! Such sweet, sweet pics. The ones I have of me as a baby playing with my parents on the beach are some of my favorite possessions, and I know Miles & Joss will feel the same some day.

  • SherryMay 30, 2011 - 9:45 am

I love my kids sooo much. They make the clouds in my life disappear.

  • Lisa KoedykerMay 31, 2011 - 10:32 am

Hey Betsy! I’m a friend of Rachel’s, here in Holland. I love following your blog and seeing your adorable kids. I too have the crazy baby hair growing in all over. I love your headband scarfs that you are wearing. Did you make them or buy them?

  • It's me, Betsy!May 31, 2011 - 1:11 pm

Thanks! The scarf is just Old Navy, like 3 years ago! It’s a long skinny rectangle. : )

  • Maya LaurentJune 15, 2011 - 1:00 pm

Yep…I’m this far behind on catching up on your blog! Looks sooo much fun! Okay question…how do you tie your scarf like that???

my favorite splurges

In these lean times, splurging feels just that more luxurious these days, right? I don’t know about you, but when we do decide to go nuts and spend money on something nice these days, it just feels that much better. Or in the case of a pricey massage, it goes just THAT MUCH FASTER. So…

Do you have the Beco Gemini or the Butterfly? It looks like you can carry with baby front facing out in the gemini but not the butterfly. I am due June 1st and have been patiently waiting to go ahead with my Beco purchase and I’m finally ready! P.S. our I Pad is already ordered and on the way. Would love in the future if you blog any favorite apps!

    Thanks:) Lori

CBS Sunday Morning is the best show on tv. Although the last segment (the nature footage) has been cut really short lately, which is a bummer. Maybe I’ll make waffles this Sunday 🙂

We didn’t get an iPad until our son was a year old, but I can wholeheartedly agree about how useful an iPhone is when you have a newborn. We were in the hospital longer than normal when he was born and it was my only way to the outside world those first few days and then the next couple weeks. And of course, the late night feedings and countless baby apps 🙂

  • NickiMay 26, 2011 - 11:53 pm

Too funny! You and I have much in common. I, too, love my Beco, our new Quest van, my jogging stroller (although I am not a jogger, it works great at the beach), my Kitchenaid mixer, and my recently acquired iPad. Wish I would have had it 6 months ago for those late night feedings, although those late night feedings seem to be creeping back into our life 🙂 And I have to agree about my camera. Ever since my baby girl was born in November, I have tossed around the idea of closing my photography business. My husband said, “Great! You can sell your equipment.” to which I replied, “No way! Even if I didn’t do this professionally, I wouldn’t ever want to give up my camera as I will never stop wanting beautiful photos of my kiddos.” And something I splurged on today was a bathing suit. It’s the first time in a long time I have felt that comfortable and cute in a swimsuit. And I do live 10 minutes from the beach, so it’s bound to get lots of use.

  • CassieMay 27, 2011 - 9:04 am

I love your list! I pulled the Beco carrier out this week; LOVE that thing! And jogging strollers are so worth the money. I don’t know what I did before we had ours.

My coin jar definitely has “new camera” written on it. 🙂

  • jessMay 27, 2011 - 2:33 pm

So fun!!! Very creative list I love it 🙂

  • GailMay 27, 2011 - 2:53 pm

You know I LOVED seeing that waffle maker on there 😉

  • Heidi GarciaMay 27, 2011 - 4:24 pm

I love my baby carrier too, however, don’t think it’s a Beco…. I put Tally in it when I go grocery shopping and she usually fall asleep and keeps her from jumping out of the cart…and yes, she would try that… I so want your camera been looking on craigslist, but can’t justify buying it till I get my last piece of Pilates equipment, since ya know, that IS what I do for a living :-)~ other than that, awesome list…. I have no list…I have a Pilates studio hahaha

  • SusanMay 27, 2011 - 4:51 pm

I agree completely with landscaping as an investment you will never regret. And camera equipment. And a great house that you can make a real home. And my hot tub 🙂

  • KelliMay 29, 2011 - 11:45 am

I do a lot of cooking/baking and am so thankful for the Kitchenaid. We also splurged on a food processor, I think it’s a Kitchenaid too. My 24-70mm Canon lens was a splurge, but I love it and needed it. I got pictures of my grandpa just before he passed. Our garage, we had a rickety old leaking carport. It was a huge expense but it is so worth it for the additional storage space. And my Mac. It’s so much better than the PC.

  • Heather CorporanMay 29, 2011 - 4:56 pm

Since you mentioned the waffle maker, thought I’d send you off this oober yummy belgian waffle recipe. It’s the best.recipe.ever! And SUPER easy, albeit not light on the calories ; ) Ingredients 2 cups Yogurt, vanilla or fruit flavored (Stoneyfield’s is the best!) 1/2 cup Butter, melted 2 cups Flour 1 tsp. Baking Soda 1 tsp. Baking Powder 2 Eggs, whisked Mix yogurt and butter in a mixing bowl on low speed. Add eggs slowly. Beat in the dry ingredients until mixed. This will create a very sticky batter. Pour about 1/2 to 3/4 cup of waffle mix into the iron and cook according to the iron’s instructions. These waffles come out very light and puffy. Add chocolate chips for a treat : ) I cook mine for 5 minutes total (mine does not flip) We always get rave reviews from this recipe (I’ve even won a contest with it! lol And I second the minivan!!! Everyday I thank God for doors that open themselves (momma of three kiddos under 6) ; D

Ah, we love us some Ipads and Iphones here…and the photo of Miles with the Ipad could be an Apple ad.

myrtle beach: sand and swim

I’m every so slowly starting to come out from the mountian of laundry and left over exhausted haze from our trip to Myrtle Beach to unearth some photos to share. It was a trip with my inlaws, so I’ll be sharing some pics of them, but today, these are just some pics of our little…

Looks like a fun trip! I know you posted these pics to show off your kiddos – BUT – O.M.G. did you really have TWO babies with that body?! Seriously girl, you look amazing!

  • Jen OMay 25, 2011 - 3:27 pm

Looks like you had a great time! I agree with Joss, the pool is more fun! P.S. I like your old bathing suit. It’s cute!

  • Lydia GrossMay 25, 2011 - 3:43 pm

Betsy – you did NOT have 2 children! How are you soo fit? Incredible! and what a fun vacation 🙂

  • April Cochran-SmithMay 25, 2011 - 4:25 pm

Dude, your body is killing me! I’d wear a bikini all the time if I looked like you 🙂 Also, Jossy’s hat is too cute. Looks like you had a great time & I can’t wait to see the rest of your pictures!

  • CassieMay 25, 2011 - 8:28 pm

You are one HOT beach mama! And I love that John is rocking a Wild Cats tee. SO happy you had such a great time!!

  • BetsyMay 25, 2011 - 11:01 pm

Thanks guys! I swear, it’s just the nursing that is helping my body out right now.

  • AraceliMay 26, 2011 - 2:15 am

Honestly Betsy, you look amazing. Nursing, doesnt give you toned arms and a flat toned stomach! I have one kid and I look like a plum! WTH?!

  • Jessica ParkisonMay 26, 2011 - 5:06 pm

Wow! I’m going with the trend…how do you have that body after two babies? Tell me exactly what you eat and when, because I’m nursing too but my body doesn’t look anything like that! Love John and Miles playing in the waves. Oliver is the same way, no fear at all…however, the pool freaks him out. Strange child of mine. Where did you stay in M.B. doesn’t look as touristy/redneck as some areas? 😉

  • Jessica ParkisonMay 26, 2011 - 5:08 pm

P.S. I’m stealing your scarf trend for when I don’t have time to go get my hair colored so I can hide my roots. So cute!

  • donyaMay 26, 2011 - 11:27 pm

Holy crap, you look good Betsy! And I’m so glad to see this solution for the weird whispy hairs you say you’ve got. I’ve got the same thing happening from my post-baby hairloss. SO awful. I had never heard about the hairloss before becoming a mama.

  • JackieMay 27, 2011 - 9:52 pm

Hey Bets – so glad you all had a blast. Isn’t it the best feeling watching your children see the ocean for the first time. My girls first ‘real’ vacation was to Myrtle Beach and Allyson’s response to the ocean was, ‘where is the other side’. Glad you had a fun with the family.

  • Heather CorporanMay 29, 2011 - 5:03 pm

I second Jenna! Seriously? You look AMAZING!! Any bathing suit would suit you ; ) If you have a Marshalls where you live, check there for scarves, they have an awesome selection and the prices won’t break your bank : ) I hated those barely there patches of hair and whispy’s after all three of my kiddos! I wish I would’ve thought of a scarf : D

  • DanielleJune 8, 2011 - 12:06 am

I’m sorry, but I have to jump on the bandwagon.. You. Look. Amazing. Wow!!!!!

  • […] so thrilled. It was a precious week of catching up as we hadn’t seen them since our trip to Myrtle Beach with them. Here’s a peek into our Thanksgiving down south. Much thanks to Tom & Donna for […]

Great shot! Glad you had a chance to get away! Myrtle Beach is a gorgeous place….one of our favorites!

  • Heidi RMay 23, 2011 - 4:52 pm

Welcome back, Betsy! Enjoy your evening without kids. Or maybe the sitter’s coming so you can do laundry and grocery shop? I hope not.

  • BethMay 23, 2011 - 7:34 pm

Oh, I went to Myrtle Beach once as a kid and LOVED it. So glad you had a good vacation!

  • Karen from ChookooloonksMay 24, 2011 - 10:33 am

I love photographs that, 20 years from now, are going to invoke strong memories in the photographer and the subjects.

I think this is one of those photographs. 🙂

  • jesszMay 24, 2011 - 2:28 pm

    Beautiful. 🙂

  • april summersMay 24, 2011 - 3:26 pm

Great photo. I must add that I am jealous of your figure! Look how tones your arms are.
